    Key Ingredients

This image is an ingredient shot specifically for the air fryer burrito recipe.

Flour tortillas: Large tortillas are the best for this air fryer recipe because they hold the filling together. If using smaller tortillas instead, you can use less filling.

Sausage: We prefer to use regular pork sausage but you can also use seasoned sausage. Just be sure to add the taco seasoning to taste.

Potatoes: We used Yukon gold potatoes, but you can also use Russett potatoes. Another great alternative would be hash browns or tater tots if that's what you have on hand.

    Step-By-Step Instructions

This photo collage consists of various scenes. In the first scene, there are veggies sizzling in a skillet. In the second scene, scrambled eggs are being cooked in another skillet. In the third scene, a tortilla is placed on a flat surface and loaded with veggies, meat, and cheese as ingredients. Finally, the fourth scene showcases three cooked burritos in an air fryer basket.

    Preheat your oven to 375°F.

In a large skillet over medium-high heat, cook the breakfast sausage until browned and crispy, about 8-10 minutes. Add the diced potatoes, onion powder, and taco seasoning to the skillet. Combine them all and cook for an additional cooking time of 5-7 minutes, or until the potatoes become tender and the sausage is cooked through.

Add the diced red and green bell peppers, canned black beans, and diced tomatoes to the skillet and cook for 2-3 minutes, or until the veggies are slightly softened.

In a separate skillet, spray cooking spray or add olive oil and scramble the eggs over medium heat until they are cooked through. Set them aside.

Lay the tortillas on a flat surface and spoon the ground sausage and potato mixture onto each tortilla, leaving a small border around the edge.

Top each flour tortilla with scrambled eggs, shredded cheddar cheese, and a sprinkle of fresh cilantro.

Fold the tortillas over the filling by first tucking in the outer edges towards the center of the filling. With your fingers still holding the edges, use your thumbs to roll the bottom of the burrito until its seam faces down.

Place the burritos in an air fryer basket in a single layer and bake for a cook time of 8-10 minutes, or until the tortillas are golden brown and crispy.

    Serve your crispy breakfast burritos!

    Recipe Tips and Tricks

The best thing about these burritos is how versatile they are! You can add sour cream to it and use different meats like ham, turkey, or chorizo, and use veggies like mushrooms, spinach, refried beans, or kale.

You can also spice your air fryer burritos up with hot sauce, jalapenos or green chilies, spicy pico de Gallo, or one of your favorite sauces.

Using leaner meats like turkey sausage, chicken or Canadian bacon would be a great option. You can also use whole wheat tortillas, and add plenty of veggies.

    Storage and Reheating Instructions

You can freeze these burritos by first letting them cool completely before tightly wrapping them in tin foil or plastic wrap. They should last in the freezer for 1-2 months.

To reheat, simply remove the foil or plastic wrap and heat them in the microwave, oven, or air fryer until they are heated through.

    Recipe FAQs

What exactly is a breakfast burrito?
A breakfast burrito is a crispy burrito that uses traditional breakfast ingredients in its filling. It typically includes scrambled eggs, bacon or sausage, cheese, and veggies. They are a quick and excellent choice for breakfast.

Can you make these egg burritos ahead of time?
You absolutely can! We have found that the best way is to wrap them in plastic wrap so they don't dry out before placing them in an airtight container or resealable plastic bag. You can then put them in the fridge for up to 3-4 days.

Can I use the same cooking instructions for a frozen breakfast burrito?
Certainly. You can use the same cooking temperature for frozen cheese burritos. Our favorite frozen burritos so far are El Monterey burritos.

This image features a close-up shot of a burrito placed on top of another burrito, both resting on a plate. The bite taken from the burrito reveals the mouth-watering ingredients inside, including melted cheese, meat, eggs, and veggies.

With its crisp tortilla, fluffy eggs, and a medley of fresh ingredients, this breakfast burrito will totally satisfy your taste buds and leave you feeling really satisfied and ready to conquer the day.

    Notes

Flour tortillas: Large tortillas are the best for this air fryer recipe because they hold the
filling together. If using smaller tortillas instead, you can use less filling.
Sausage: We prefer to use regular pork sausage but you can also use seasoned sausage. Just be sure to add the taco seasoning to taste.
Taco seasoning: This spice blend is a great way to add flavor to this Mexican-style dish.
Potatoes: We used Yukon gold potatoes, but you can also use Russett potatoes. Another great alternative would be tater tots if that's what you have on hand.
Bell peppers: Feel free to use green, red, or yellow bell peppers.
Pico de Gallo: We usually get this from the grocery store to save time on meal prep.
Black beans: You can also use refried beans or pinto beans.
Eggs: They are a delicious way to add a fluffy texture to this breakfast wrap. You can also substitute the eggs with crumbled tofu. Some people put hot sauce in the eggs for that extra kick.
Cheese: We love using cheddar cheese but other alternatives include melty cheeses like Monterey jack, pepper jack, or mozzarella. You can also use feta cheese.
Fresh Cilantro: This herb adds an extra layer of flavor and a pop of color to your crispy burrito.
Limes: They give a tangy and citrusy flavor to the burrito and bring out the flavors of the other ingredients.
Sour cream: This adds a delicious flavor and creaminess to the dish.
Olive oil: We prefer to use olive oil but you can use your choice of vegetable oil.
Salt and pepper: Add these to taste.
