Flour tortillas: Large tortillas are the best for this air fryer recipe because they hold the filling together. If using smaller tortillas instead, you can use less filling.
Sausage: I prefer to use regular pork sausage but you can also use seasoned sausage. Just be sure to add the taco seasoning to taste.
Potatoes: I used Yukon gold potatoes, but you can also use Russett potatoes. Another great alternative would be hash browns or tater tots if that's what you have on hand.
Step-By-Step Instructions
Preheat your oven to 375°F.
In a large skillet over medium-high heat, cook the breakfast sausage until browned and crispy, about 8-10 minutes. Add the diced potatoes, onion powder, and taco seasoning to the skillet. Combine them all and cook for an additional cooking time of 5-7 minutes, or until the potatoes become tender and the sausage is cooked through.
Add the diced red and green bell peppers, canned black beans, and diced tomatoes to the skillet and cook for 2-3 minutes, or until the veggies are slightly softened.
In a separate skillet, spray cooking spray or add olive oil and scramble the eggs over medium heat until they are cooked through. Set them aside.
Lay the tortillas on a flat surface and spoon the ground sausage and potato mixture onto each tortilla, leaving a small border around the edge.
Top each flour tortilla with scrambled eggs, shredded cheddar cheese, and a sprinkle of fresh cilantro.
Fold the tortillas over the filling by first tucking in the outer edges towards the center of the filling. With your fingers still holding the edges, use your thumbs to roll the bottom of the burrito until its seam faces down.
Place the burritos in an air fryer basket in a single layer and bake for a cook time of 8-10 minutes, or until the tortillas are golden brown and crispy.
