- Wash the fingerling potatoes thoroughly under running water and then slice each potato in half lengthwise. Pat the sliced potatoes dry with paper towels to remove excess moisture and place them in a large bowl.
- Drizzle about 3 tablespoons of olive oil over the potatoes, then sprinkle in ½ teaspoon of Italian seasoning, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, and salt and pepper to taste. Toss the potatoes in the bowl until they are evenly coated with the oil and seasonings.
- Preheat your air fryer to 375°F (190°C). Place the seasoned potatoes in a single layer in the preheated air fryer basket and cook them for 15-20 minutes, shaking the basket halfway through the cooking time to ensure even cooking. The potatoes are done when they are golden brown and crispy on the outside and tender on the inside. You can check by piercing a potato with a fork; it should go in easily.
- Allow the potatoes to cool for about 5 minutes before serving. Serve them with ranch dressing, ketchup, garlic aioli sauce, or your favorite dipping sauce.
