This delicious Cobb salad is made with bacon, avocado, hard-boiled eggs, blue cheese, tomatoes, and lettuce. It's easy to make and perfect for lunch, dinner, or a light snack.

Ingredients
  

  • ½ pound crispy bacon
  • 2 hard-boiled eggs, peeled and quartered
  • 1 head romaine lettuce, chopped
  • 1 pint grape tomatoes, halved
  • ¼ cup crumbled blue cheese
  • 2 mini cucumbers, sliced
  • 1 large avocado, peeled, pitted, and diced
  • 2-3 tablespoons ranch dressing

Method
 

  1. Cook the bacon for 10-15 minutes in a large or medium skillet over medium-high heat until it is browned and crispy. Drain the bacon on paper towels and set aside.
  2. In a large bowl, combine the lettuce, tomatoes, cucumber, avocado, blue cheese crumbles, bacon, and hard-boiled eggs.
  3. Serve the classic Cobb salad immediately with a drizzle ( about 2-3 tablespoons) of homemade ranch dressing, balsamic vinaigrette, or your favorite dressing.
  4. This salad can be served as a side or the main dish.

Notes

Bacon: You can substitute bacon with turkey bacon, veggie bacon, or even tempeh bacon.
Eggs: If you don't like hard-cooked eggs, you can substitute them with cooked rotisserie chicken, tofu, or even chickpeas.
Romaine lettuce: You can substitute this lettuce with iceberg lettuce, spinach, or arugula.
Grape tomatoes: Cherry tomatoes, diced Roma tomatoes, or even sun-dried tomatoes can be used instead.
Blue cheese: If you aren't a fan of Roquefort cheese or blue cheese, you can substitute feta cheese, goat cheese, cheddar cheese, or even Parmesan cheese.
Mini cucumbers: Feel free to use regular cucumbers, zucchini, or even celery for this great salad.
Avocado: If you don't like avocado, you can substitute mashed potatoes, hummus, or even guacamole for the avocado in a Cobb salad.
Ranch dressing: If you don't like ranch dressing, you can substitute blue cheese dressing, honey mustard sauce, French dressing, Thousand Island dressing, Caesar dressing, or even vinaigrette for the ranch dressing in a Cobb salad.
