Ingredients

  • 2 yellow squash
  • 2 green zucchini
  • 3 tablespoon olive oil extra virgin
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Method

  1. Wash the yellow squash and zucchini thoroughly. Cut them into ½-inch rounds to ensure uniform cooking time.
  2. Place the squash slices in a large mixing bowl. Drizzle with extra virgin olive oil, then add onion powder, garlic powder, Italian seasoning, salt, and pepper. Toss well with your hands or a silicone spatula until all pieces are evenly coated.
  3. Preheat your air fryer to 375°F (190°C) for 3 minutes on high heat.
  4. Arrange the slices in a single layer in the air fryer basket. Cook in batches if necessary to avoid overcrowding. Air fry for 12-15 minutes at 375°F (190°C), flipping halfway through.
  5. The squash is done when the edges are golden brown, and the pieces are soft when pierced with a fork. If needed, cook them for 2–3 more minutes.
  6. Transfer them to a serving dish.

Extra Virgin Olive Oil: Alternative oils work well too, making this one of the best recipes for customization.
Garlic Powder and Onion Powder: Both add aromatic depth and provide savory notes to this easy recipe.
Italian Seasoning: Gives the squash Mediterranean flavor.
Salt and Black Pepper: Enhances the natural flavors of the squash.
