Air Fryer Breakfast Burrito

These delicious and convenient breakfast burritos are made with your favorite breakfast
fillings and cooked to crispy perfection in the air fryer.

Ingredients
  

  • 4 large flour tortillas
  • 1 pound pound breakfast sausage
  • 1 teaspoon taco seasoning
  • 2 Yukon gold potatoes peeled and diced
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • ½ cup pico de gallo diced
  • ½ cup canned black beans rinsed and drained
  • 8 large eggs
  • ½ cup shredded cheddar cheese
  • ¼ cup chopped fresh cilantro
  • 2 limes cut into wedges
  • 2 tablespoons olive oil
  • cup Sour cream
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 375°F.
  2. In a large skillet over medium-high heat, cook the breakfast sausage until browned and crispy, about 8-10 minutes. Add in the diced potatoes, onion powder, and taco seasoning to the skillet. Combine them all and cook for an additional cooking time of 5-7 minutes, or until the potatoes become tender and the sausage is cooked through.
  3. Add the diced red and green bell peppers, canned black beans, and diced tomatoes to the skillet and cook for 2-3 minutes, or until the veggies are slightly softened.
  4. In a separate skillet, spray cooking spray or add oil and scramble the eggs over medium heat until they are cooked through. Set them aside.
  5. Lay the tortillas on a flat surface and spoon the ground sausage and potato mixture onto each tortilla, leaving a small border around the edge.
  6. Top each flour tortilla with scrambled eggs, shredded cheddar cheese, and a sprinkle of fresh cilantro.
  7. Fold the tortillas over the filling by first tucking in the outer edges towards the center of the filling. With your fingers still holding the edges, use your thumbs to roll the bottom of the burrito until its seam faces down.
  8. Place the burritos in an air fryer basket in a single layer and bake for 8-10 minutes, or until the tortillas are golden brown and crispy.
  9. Serve your crispy breakfast burritos hot with additional pico de gallo, sour cream, lime wedges, and cilantro, if desired.

Notes

Flour tortillas: Large tortillas are the best for this air fryer recipe because they hold the
filling together. If using smaller tortillas instead, you can use less filling.
Sausage: We prefer to use regular pork sausage but you can also use seasoned sausage. Just be sure to add the taco seasoning to taste.
Taco seasoning: This spice blend is a great way to add flavor to this Mexican-style dish.
Potatoes: We used Yukon gold potatoes, but you can also use Russett potatoes. Another great alternative would be tater tots if that's what you have on hand.
Bell peppers: Feel free to use green, red, or yellow bell peppers.
Pico de Gallo: We usually get this from the grocery store to save time on meal prep.
Black beans: You can also use refried beans or pinto beans.
Eggs: They are a delicious way to add a fluffy texture to this breakfast wrap. You can also substitute the eggs with crumbled tofu. Some people put hot sauce in the eggs for that extra kick.
Cheese: We love using cheddar cheese but other alternatives include melty cheeses like Monterey jack, pepper jack, or mozzarella. You can also use feta cheese.
Fresh Cilantro: This herb adds an extra layer of flavor and a pop of color to your crispy burrito.
Limes: They give a tangy and citrusy flavor to the burrito and bring out the flavors of the other ingredients.
Sour cream: This adds a delicious flavor and creaminess to the dish.
Olive oil: We prefer to use olive oil but you can use your choice of vegetable oil.
Salt and pepper: Add these to taste.
